Rani's Florida Fauxtato Salad
1 large head of cauliflower, washed, stemmed, and broken into small florets
1 medium onion, coarsely chopped (I use Vidalia or Texas Sweet Onions for this)
3 hard-boiled eggs, coarsely chopped
4 slices of bacon
1-1/4 cups mayonnaise
1/4 cup prepared mustard (I use dijon)
8 radishes, sliced (optional)
2-4 tablespoons vinegar (any kind, I use tarragon/white wine vinegar)
1 teaspoon celery seeds
1 packet of artificial sweetener
freshly ground pepper, to taste
Steam the cauliflower in the microwave with NO added water. Drain and refrigerate.
Cook the bacon and put it aside, reserving the bacon grease.
In a large bowl, mix together the mayonnaise, mustard, vinegar, bacon grease, celery seeds, and artificial sweetener.
Mix in the chilled cauliflower, chopped onion, chopped eggs, and sliced radishes; toss well to coat all ingredients.
Season to taste with pepper, and if desired, additional mustard and/or vinegar, to taste.
If there is not enough sauce, add more mayonnaise and mix well.
Crumble the bacon over the top and toss lightly.
Put it into a serving bowl, sprinkle with paprika, and chill well.
